As the brand rapidly expanded and entered the retail market, the company made the strategic decision to implement a CE-certified continuous fryer to improve working conditions and boost production capacity.
Today, the central kitchen has successfully established a standardized frying process, where products are pre-fried and then distributed to each branch. This upgrade not only simplifies store-level operations but also ensures consistent and reliable frying quality across all locations.
Customer Background
The client is a leading Chinese restaurant chain with strong roots in both Mainland China and Taiwan, operating over 200 locations worldwide and actively expanding into international markets. The brand specializes in Chinese fast food and fried dishes, with signature items including pork chops, sausages, chicken nuggets, and drumsticks.
Facing intensifying market competition, the company has begun implementing centralized kitchen production and automated food machinery to reduce labor demand at individual branches and increase production efficiency. In addition, the brand has extended its business model to convenience stores and retail channels, aiming to reach broader consumer markets.
Project Journey
The client first became acquainted with TSHS through online marketing and trade show events. During one exhibition, the brand's general manager directly expressed an urgent need for frying equipment and requested delivery within one month.
Upon further discussion, the client's key objectives were identified as follows:
• Increase overall production capacity
• Reduce labor and improve operational efficiency at store level
• Expand into the ready-to-eat microwave meal market through convenience store channels
• Ensure product consistency and stable frying quality
Despite the tight delivery schedule, TSHS quickly coordinated internally across production and manufacturing teams and committed to meeting the deadline—ultimately becoming a trusted equipment partner for the client.
Once production was completed, the client was invited to our facility for on-site acceptance testing with their own materials. Given the high amount of residue produced during frying, we also recommended pairing the fryer with a fine oil filtration system to extend oil life and maintain frying quality.
Challenges & Needs
Before implementing a CE-certified continuous fryer, the client's central kitchen was only responsible for marination, quality control, and packaging. The semi-finished products were delivered raw to each branch, where store employees manually deep-fried them according to SOPs. This process resulted in several key challenges:
1. High Labor Costs – Each store required significant manpower to operate frying stations.
2. Limited Efficiency – Manual frying in small batches couldn't keep up with peak-hour demands.
3. Inconsistent Quality – Variations in frying time and temperature led to inconsistent product quality.
To support the brand's rapid expansion, the client urgently needed a fully automated frying solution—with the critical requirement of delivery within one month to align with their aggressive growth timeline.
Installation
The client's order included a CE-certified continuous fryer, fine oil filtration unit, and an oil storage tank. However, during the installation process, it was discovered that the actual ceiling height of the facility was only 3.1 meters—significantly lower than the dimensions previously provided—resulting in clearance issues with the oil tank.
TSHS promptly dispatched technical staff to the site and adjusted the height of the oil storage tank free of charge. The installation was successfully completed, and the equipment was delivered into full operation—demonstrating TSHS’s flexibility, responsiveness, and strong problem-solving capabilities.
One year after delivery, the customer personally called to share positive feedback, stating that the automated frying line in their central kitchen had demonstrated excellent performance in both production capacity and frying quality. The system has been running stably and has effectively reduced labor requirements. The customer further expressed their intention to purchase a second frying production line, fully affirming the reliability and practical benefits of TSHS equipment.
Training & After-Sales Support
A comprehensive training program was provided to ensure the client’s team could fully operate, clean, and maintain the continuous fryer. The training covered operational procedures, daily care, and troubleshooting. While most staff adapted quickly, some issues arose due to deviations from the recommended instructions. Upholding our commitment that “no machine is ever left unsupported,” the TSHS team continued to offer real-time support and practical improvement suggestions:
• Operational Error – A pressure drop triggered the safety mechanism due to incorrect switching of the oil pressure mode. Our team resolved the issue promptly through remote assistance.
• Product Compatibility – Smaller items (e.g., sausages) initially fell through the conveyor due to large mesh spacing; this was later corrected through system adjustments.
• Recipe Impact – A custom sauce used by the client tended to stick to the hexagonal rods during frying, causing product curling or separation of meat from bone. While we proposed a hardware modification (adding clips), the client opted for a cost-free alternative, which we supported to avoid production disruption.
