Customer Background | Thai Food Manufacturer Producing Fried Eggplant to Japanese Quality Standards

The customer is a food manufacturer based in Chiang Mai, Thailand, specializing in fried eggplant production for both the domestic Thai market and export to Japan. Having studied and lived in Japan, the company owner places strong emphasis on attention to detail and quality standards across factory management, production processes, and food processing equipment selection.

For food manufacturers producing fried eggplant at industrial scale, a fried eggplant production line involves more than simply cooking the product. The frying system must provide consistent oil temperature, controlled frying time, stable product conveying, sufficient production capacity, and reliable performance during continuous operation. These factors are particularly important for export-oriented production, where consistent product quality across large production volumes is essential and a stable industrial continuous fryer can help minimize variations caused by manual processing.

As production requirements increased and quality expectations became more demanding, the company began looking for ways to improve its existing frying process and evaluate a new continuous frying system for more stable and efficient production.

When upgrading an industrial frying line, food manufacturers need to consider more than whether the equipment can simply handle current production. Product characteristics, target capacity, frying time, available factory space, and future product development plans all influence the selection of suitable industrial frying equipment. In addition to its existing fried eggplant production, the customer was also planning to develop meat products and other new fried foods. The new continuous frying equipment therefore needed to support the current fried eggplant production line while providing sufficient flexibility for a wider range of future fried food applications.

Partnership Begins | Validating Fried Eggplant Results Through Product Trials in Taiwan

The partnership began in 2016 through an introduction by a local agent. With a management system strongly influenced by Japanese practices, the customer maintained strict requirements for equipment quality, manufacturing processes, and actual production performance. When first introduced to Tsung Hsing (TSHS), the customer therefore took a careful approach to evaluating whether the equipment could meet its existing production standards. Drawing on its experience in food processing and industrial frying applications, the TSHS team worked closely with the customer to evaluate the characteristics of the fried eggplant, production method, target capacity, and suitable equipment configuration. The customer was then invited to Taiwan to conduct a fried eggplant frying trial using its actual product and processing conditions.

During the visit, the customer not only evaluated the actual frying results but also toured TSHS's food processing equipment manufacturing facility to gain a better understanding of its laser cutting, equipment fabrication, assembly, and production management processes. For a manufacturer with stringent equipment standards, seeing the complete manufacturing process firsthand provided greater confidence in both equipment quality and long-term reliability. After the factory tour, the customer recognized TSHS's manufacturing and quality management practices as being aligned with the Japanese-style production and management standards it valued.

After the fried eggplant trial achieved the expected results, the customer gained confidence in the performance and manufacturing quality of the FRYIN-602 Continuous Fryer. Within approximately seven days of the trial, the customer confirmed the purchase and moved forward with the project, selecting a FRYIN-602 Continuous Fryer and Fine Oil Filter for its first installation. This initial project laid the foundation for nearly a decade of cooperation and the customer's subsequent purchase of another FRYIN-602.

Repeat Purchase | Choosing the FRYIN-602 Continuous Fryer Again After Years of Operation

Following the first equipment installation in 2016, the customer continued using Tsung Hsing (TSHS) frying equipment for its production. The equipment delivered reliable long-term performance and met the customer's production capacity expectations. Over the years, the partnership continued through equipment maintenance, replacement parts, spare parts supply, and ongoing discussions on food processing applications. By 2025, the customer began upgrading its existing production line while also planning to develop meat products and other new fried foods. This created a need to evaluate new industrial frying equipment that could support both its existing fried eggplant production and future product development.

Rather than starting over with a new equipment supplier, the customer chose the FRYIN-602 Continuous Fryer again based on years of actual production experience. In October 2025, the customer returned to Taiwan to conduct frying trials for fried eggplant and new products. After verifying the results, the equipment order was confirmed the following month, completing the evaluation and purchasing process in approximately one month. For an industrial food manufacturer, the first fryer purchase is primarily about verifying whether the equipment can meet production requirements. Equipment Solution | How Is the FRYIN-602 Continuous Fryer Used for Fried Eggplant Production?

Both frying systems purchased by the customer were based on TSHS's proven standard equipment design, without extensive customization. For the second system, a Teflon conveyor configuration was incorporated to accommodate the processing characteristics and production requirements of the customer's future product applications. Fried eggplant has a relatively high moisture content, while variations in product size, cutting method, and pre-processing conditions can all affect frying performance and final product quality. In high-volume fried eggplant production, maintaining consistent oil temperature, frying time, and product conveying conditions is therefore essential. A continuous frying process helps minimize batch-to-batch variation and enables food manufacturers to establish more stable conditions for large-scale production.

The FRYIN-602 Continuous Fryer serves as the primary cooking system in the customer's fried eggplant production line. Compared with batch frying, an industrial continuous fryer moves products steadily through the frying zone at a controlled conveyor speed while managing oil temperature and frying time. This creates more consistent processing conditions and makes the system suitable for food manufacturers requiring high-volume, continuous, and stable fried food production.

Delivery Challenge | Completing Equipment Manufacturing, Export, and Installation Within 4.5 Months

The customer maintains strict standards for both the manufacturing quality and appearance of its food processing equipment. During the first delivery, the customer paid close attention to minor creases, dents, and fabrication marks left on some stainless steel panels after bending. Although these were normal characteristics of industrial equipment fabrication, the TSHS after-sales technical team responded to the customer's requirements by carrying out additional surface finishing and re-polishing. Each detail was carefully reviewed before the equipment was approved for delivery. With the experience gained from the first project, Tsung Hsing (TSHS) had a clear understanding of the customer's expectations for food processing equipment manufacturing and surface finishing by the time of the second purchase. These requirements could therefore be addressed directly during the manufacturing stage, significantly reducing subsequent adjustments and communication time.

The second FRYIN-602 Continuous Fryer presented a different challenge—a tight delivery schedule. Only approximately 4.5 months were available from order confirmation to the planned completion of on-site installation. Within this period, the project had to cover equipment manufacturing, export preparation, ocean freight, customs clearance in Thailand, inland transportation to Chiang Mai, equipment positioning, piping, installation, and production trials. The delivery period also coincided with a major holiday season in Thailand, when ports, logistics, and customs operations were particularly busy. Close coordination was therefore required among the TSHS team in Taiwan, the TSHS Thailand team, and the customer's engineering team to keep equipment shipment and on-site preparation on schedule.

Through close cross-border coordination, the FRYIN-602 Continuous Fryer was successfully delivered to Chiang Mai and installed at the customer's food processing facility. The on-site installation and testing process, originally estimated to require approximately five days, was completed in just three days, allowing the project to proceed smoothly into product trials and production preparation.

Localized Service in Thailand | Installation, Technical Support, and Spare Parts Supply

As the TSHS Thailand branch continues to strengthen its local after-sales and technical support capabilities, the food processing equipment manufacturing expertise and process knowledge of the Taiwan headquarters can be effectively integrated with the local engineering team in Thailand. This enables customers to receive more responsive support throughout the equipment lifecycle, from installation and commissioning to ongoing maintenance. Before the equipment was installed, the customer's in-house engineering team worked directly with TSHS Thailand engineers to confirm equipment positioning, piping requirements, and other pre-installation work.
